Less tomato Chili -canned goods

My mother sent up a ton of canned goods. Tonight was the first time use any of them. I was a little nervous how the ground beef was going to taste. It is really good and that is the reason why there is beef in this chili. (sorry danielle) This is the first time in a very long time that I put beef in my chili, normally its vegetarian. Sometimes I add bacon or chicken.

I don’t really like the taste of tomatoes, so this chili I decided to add less. Instead of tomato sauce I used chicken broth that my mom sent up. I was a little nervous while it was cooking because it was not as red as it normally is. I loved how it turned out. Again, I don’t like tomatoes so I still need another taste tester. Also, it looked a little funny because I was really hungry, so I just shoved everything into the food processor and not all of it came out a pretty as it normally does.

Ingredients Serves about 6 people?

– 2 small onions, chopped

-1 package of mushrooms, chopped

– 2 large red peppers, chopped

-1 green pepper, chopped

– 1 jalapeno, chopped I forgot this in mine ūüė¶

– Jar of beef

– 2 cans of black beans

– 1 can pinto beans

– 1 jat kidney beans

– one med jar of chicken broth

– 3 big scoops of pre minced garlic

– salt, pepper

Directions

1. Chop veggies. Saute.

2. Add the rest if the ingredients.

-my mother’s jared goods, Beef, tomatoes, chicken broth, kidney beans

3. Cook about 20 mins.

Turkey burgers with zucchini and carrots

This recipe is super easy. I really liked them. I¬†wrapped¬†the left overs in saran wrap and tossed them into the freeze. They didn’t last long in the freezer ūüôā

Ingredients

-1 medium carrot

-1 medium zuccinni

-1 pound of ground turkey

Directions

1. shredded veggies.

2. Mix togeather turkey and veggies

3. Form into patties and cook.

My moo goo gai pan -simple sauce

Matt and I made a moo goo gai pan off of a recipe last time. This time I added and took away stuff I didn’t want and made a sauce out of the things I had at my house.

Ingredients Serving about 6 people

-4 large chicken breasts, cut into small pieces

– 4 cups of broccoli, chopped

– 3 cups of snow peas

-2 cups button mushrooms, cut

-4 oz of fresh water chestnuts

– 2 sticks of carrots, chopped

– 1 jalapeno, diced

-3 spoonfuls of pre minced garlic

– 1/4 cup corn starch

-2 cups chicken broth

– 2 cups water

-2 cups of dry rice

Directions

1. Start cooking brown rice in micro wave. 2 cups brown rice, 2 cups chicken broth and 2 cups water. It took about 40min to cook. I would have liked it more if I had cooked it longer.

2. Saute veggies. set aside.

3. Brown garlic. Add chicken. Cook till done.

4. Mix together 1/4 cup of cornstarch, 2 cups chicken broth, 2 cups water and 1/4 cup soy sauce. I like a lot of sauce. -Next time I want to try 1/8th cup soy sauce and 1/8 cup oyster sauce.

5. added sauce mixture into the pan with chicken. Bring to boil. cook for about a minute. Add veggies mix together.

6. Serve veggie and chicken over rice and enjoy.

-Also there are some gluten free cookie that danielle made in the background

Moo goo gai pan

Matt surprised me with getting every thing to make moo goo gai pan. He pick the recipe. I was worried that the sauce was going to be too fancy but it was really yummy. Next time I think I will at more chicken broth to dilute the sauce a little.

Ingredients

1 tablespoon vegetable oil
1 cup sliced fresh mushrooms
2 cups chopped broccoli florets
1 (8 ounce) can sliced bamboo shoots, drained
1 (8 ounce) can sliced water chestnuts, drained
1 (15 ounce) can whole straw mushrooms, drained

1 tablespoon vegetable oil
2 cloves garlic, minced
1 pound skinless, boneless chicken breast, cut into strips

1 tablespoon cornstarch
1 tablespoon white sugar
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 tablespoon rice wine
1/4 cup chicken broth

directions

1. Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat until it begins to smoke. Stir in the fresh mushrooms, broccoli, bamboo shoots, water chestnuts, and straw mushrooms. Cook and stir until all the vegetables are hot, and the broccoli is tender, about 5 minutes. Remove from the wok, and set aside. Wipe out the wok.

2. Heat the remaining tablespoon of vegetable in the wok until it begins to smoke. Stir in the garlic, and cook for a few seconds until it turns golden-brown.

Add the chicken, and cook until the chicken has lightly browned on the edges, and is no longer pink in the center, about 5 minutes.

Stir together the cornstarch, sugar, soy sauce, oyster sauce, rice wine, and chicken broth in a small bowl. Pour over the chicken, and bring to a boil, stirring constantly. Boil for about 30 seconds until the sauce thickens and is no longer cloudy. Return the vegetables to the wok, and toss with the sauce.

Whole chicken on the grill

Ingredients

-5 pound chicken

Directions

1. clean grill and turn both sides onto high to heat up the grill

2. Rinse chicken

3. Season chicken -I used garlic salt, pepper and some BBQ seasonings

4. Turn one side of the grill off and the other side on high. Coat with oil. I spray the grill with pam.

5. Put chicken breast side down on the grill. Leave it there for 40 mins or so.

6. Flip. Cook it for 20-30min more. Check about every 15 min after that. Cut one leg open and make sure liquid runs clear. We left ours on there for about a hour and a half.

Veggie scrambler again

Basically The same thing I did last time but I spread out the ingredients making it thinner. I also mixed the potatoes and veggies together because I was lazy both ways tasted delusions.

I have been on a huge quesadilla kick lately. They are just so good and pretty good for you.

I made this while at work doing a nanny share.

I love these tortillas, they only have 133 calories instead on 200-250 and they are a reasonable price.

Ingredients serving-one Calories-340
-one tortilla
-one cup of black beans, mashed
-sliced onion, sautéed
-sliced red pepper, sautéed
-1/4 cup salsa
-about 2 table spoons of avocado

Directions
Layer every thing into your tortilla and cook on low heat.

I was so excited to eat I forgot to take a picture on the end product.


Irish stew

Ben made Irish stew and it was so good. I plan on making this again. The sauce had guinness beer and prunes. Also, the potatoes were mashed and on the side.

Chicken broccoli hot dish

I made one of my childhood favorites the other night at a friends house. It was really good and I plan on making it again very soon. Danielle was also hanging out with us so I made a separate veggie hot dish for her.

Ingredients
About 3 breast of chicken, diced
2- 2 1/2 cups of dry rice- cooked
About one bag of frozen broccoli
2 cans of cream soup (mushroom, chicken, celery)
Shredded cheeses

Directions

1. Bake chicken, cut into small pieces

2. Cook rice, my mom says 11min is the perfect time to cook rice on the stove (not min rice)

3. Mix everything together in a baking dish, leave a potion of cheese to sprinkle in top.

4. Bake until the broccoli is hot. About 30min.

Chili- Cathe don’t give a F what you like

So, I was annoyed the other day, and I decided I was going to do something for my self. I decided to make chili made exactly how I wanted, seriously this was the first time ever that I made chili that I didn’t leave something out for someone. I call it Cathe don’t give a fuck what you like, sorry for the language but that was the kinda mood I was in. It was wonderful and I am looking forward to left overs, which I have a lot of since I am the only one who ate.

Ingredients
3-4 portions of beans, 1 can= 1/3 dry
-1/3 cup dry red beans
-1/3 cup dry pinto beans
-2/3 cup black beans
I like using canned beans more, that way you can just make food on a whim
-1 package of mushrooms, chopped
-1 medium onion, chopped
-2 red peppers, chopped
-1 green pepper, chopped
-1 Serrano pepper, chopped
-1/2 pound of bacon, cut into 1 in pieces
-1 or 2 jars of sauce

Directions
1. Skip if using canned beans. I started soaking beans in the morning and then cooked them on low heat for a hour. Then set aside.

2. Cook bacon, remove from pan. Drain most of fat, leaving just enough to grease bottom of pan.

5.Added bacon, beans and sauce. Cook about 20 min.
