Stuffed sweet potato w/ black bean mango salsa

Danielle and I had our first roommate dinner in our new house 🙂 We made Stuffed sweet potato w/ black bean mango salsa. It was really good. Fast to make and super cheap. 5 bucks for four servings. Not to mention it is quite healthy. Next time I am going to put in half or no seeds from the jalapeño because it was a bit too spicy for me.

Directions
Found on
5 dollar dinners

I microwaved the sweet potatoes for 5 min because I was starving. Then I steam baked them for 30mins.

We also added some avocados on top.

I have been on a huge quesadilla kick lately. They are just so good and pretty good for you.

I made this while at work doing a nanny share.

I love these tortillas, they only have 133 calories instead on 200-250 and they are a reasonable price.

Ingredients serving-one Calories-340
-one tortilla
-one cup of black beans, mashed
-sliced onion, sautéed
-sliced red pepper, sautéed
-1/4 cup salsa
-about 2 table spoons of avocado

Directions
Layer every thing into your tortilla and cook on low heat.

I was so excited to eat I forgot to take a picture on the end product.

Household dinner-cauliflower crust pizza

These were really, really good. The kitchen was crazy hectic with so many people in there. Bryan and Tessa lead this dinner fest.
Tessa found the recipe at though pinterest.

Taken from their website.
cauliflower crust pizza
Serves 2; Adapted from Your Lighter Side.

Ingredients:
1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
olive oil (optional)
pizza sauce, shredded cheese and your choice of toppings* (I used homemade red pepper sauce)

Directions:
To “Rice” the Cauliflower:
Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don’t have a food processor, you can grate the whole head with a cheese grater). Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes (some microwaves are more powerful than others, so you may need to reduce this cooking time). There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself.
One large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.
To Make the Pizza Crust:
Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray.
In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano, crushed garlic and garlic salt, stir. Transfer to the cookie sheet, and using your hands, pat out into a 9″ round. Optional: Brush olive oil over top of mixture to help with browning.
Bake at 450 degrees for 15 minutes.
Remove from oven. To the crust, add sauce, toppings and cheese. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).
Enjoy!
*Note that toppings need to be precooked since you are only broiling for a few minutes.

My Dinner

Pinto mushroom burgers

For lunch I made a pinto bean veggie burger with baked zucchini on the side. I really liked it, it was better than I expected it to be. Next time I am going to make the patty a bit small though. The patty even looked like a meat burger, my roommate was very concerned when she saw me eat some before it was cook because she thought it was raw meat.

Baked zucchini Serving 2-4

Ingredients
-2 zucchini

Directions
– Slice zucchini approximately all the same size.
– Spray baking sheet with cooking spray, put zucchini of baking sheet.
– Season, I used salt, pepper, garlic salt
– Bake about 20 mins

Pinto mushroom burgers Serving 3-4

Ingredients
1 can of pinto beans
about half a box of fresh mushrooms sliced
half a small onion diced
Minced garlic
Sliced of avocado if you want
Cheese
Buns

Directions
1. Saute the onions and garlic in olive oil for 3 to 5 minutes, until onions are soft. Add mushrooms and cook for another 5 minutes. Set aside.

2.Mash the beans. Add the mushrooms and seasonings. Mix together. I would have been using my immersion blender if it still worked 😦

3.Shape the mixture into patties. Cook each patty, about 3 minutes on each side.

My Lunch

Side note, I have ADD and my rule to using the broiler is I have to stay right in front of the oven and not do any thing else. Yesterday I didn’t fallow my rule and burns the buns. So today I used the toaster and I turn it down to two and this still happened 😦
