Homemade pizza

Matt and I made a pizza the other night. It was really good and I for sure ate too much of it.

Ingredients
– Dough (matt might have taken this from pizza hut)
– mozzarella cheese
– onion, chopped
– mushroom, chopped
– spinach
– feta
– 7 ice cubes of homemade red pepper sauce

Directions

1. stretch out dough on greased pan

2. spread out red pepper sauce and add a layer of cheese

3. added chopped mushrooms and onion

4. add spinach, next time I want to add more than we did

5. add mozzarella and feta

6. Bake until done

Fajitas

So, my directions are not really helpful but I like the pictures 🙂

Fajitas about 4 Servings

Ingredients
– three peppers, I used one red, one yellow and one green
– One large onion
– Three large chicken breasts
– Shredded cheese
– Sour cream, salsa if you want

– Next time I want to saute a package of fresh mushrooms as well

Marinade
– equal parts oil and lemon juice, I used a little over 1/4 cup
– minced garlic
– Seasonings, salt and pepper, anything else you want to throw in

Directions

1. Marinade chicken, throw every thing into a ziplock bag and let sit for about an hour

2. Cut veggies up

3. Saute veggies

4. Cook chicken

Black bean and quinoa burgers

I feel like it is quite obvious I have gone a health food kick. I might have over done it of the beans but they were half off, and you can never go wrong with some extra beans sitting around. I am thinking I am going to need to make some chili pretty soon.

Black bean and quinoa burgers

Ingredients 2-3 burgers
1/4 cup dry quinoa
3/4 cup cooked black beans I used canned black beans
a bit of chopped onion
2-3 buns

Directions
1. Add quinoa and water plus seasonings to pot. Bring to a boil. Cover, reduce heat to medium-low, and simmer 20 minutes, or until all liquid is absorbed. you will end up with 3/4 cup quinoa, making it equal portions of quinoa and black beans.

2. Add quinoa, black beans, onion to a food processor, blend.

3. Take a burger size portion and fry in pre heated skillet, flip.

4. Make a yummy burger.

Pinto mushroom burgers

For lunch I made a pinto bean veggie burger with baked zucchini on the side. I really liked it, it was better than I expected it to be. Next time I am going to make the patty a bit small though. The patty even looked like a meat burger, my roommate was very concerned when she saw me eat some before it was cook because she thought it was raw meat.

Baked zucchini Serving 2-4

Ingredients
-2 zucchini

Directions
– Slice zucchini approximately all the same size.
– Spray baking sheet with cooking spray, put zucchini of baking sheet.
– Season, I used salt, pepper, garlic salt
– Bake about 20 mins

Pinto mushroom burgers Serving 3-4

Ingredients
1 can of pinto beans
about half a box of fresh mushrooms sliced
half a small onion diced
Minced garlic
Sliced of avocado if you want
Cheese
Buns

Directions
1. Saute the onions and garlic in olive oil for 3 to 5 minutes, until onions are soft. Add mushrooms and cook for another 5 minutes. Set aside.

2.Mash the beans. Add the mushrooms and seasonings. Mix together. I would have been using my immersion blender if it still worked 😦

3.Shape the mixture into patties. Cook each patty, about 3 minutes on each side.

Side note, I have ADD and my rule to using the broiler is I have to stay right in front of the oven and not do any thing else. Yesterday I didn’t fallow my rule and burns the buns. So today I used the toaster and I turn it down to two and this still happened 😦


Burgers- mushroom and beef

We had a household dinner the other night. We made burgers, mostly beef burgers but danielle and I ate really yummy mushroom burgers with red pepper and onions and avocado and jo jos on the side.

Directions
1. Broil mushroom for about 5 mins.
2. Fry red pepper and onion.
3. Put every thing on a bun.

Bangers and mash

Ben made me bangers and mash, truthfully I was a little scared because he was trying out a new recipe with three different kinds of muster in the potatoes but it was really good. I also want to make bangers and mash with mashed cauliflower and mushroom gravy sometime soon.

Ingredients
2 pounds fresh veal or chicken sausages (8 large sausages)
2 pounds Yukon Gold potatoes, peeled and diced
Kosher salt
4 tablespoons (1/2 stick) unsalted butter, diced
4 ounces creme fraiche
1/2 cup whole milk
2 teaspoons Dijon mustard
2 teaspoons whole-grain or coarse mustard
1 teaspoon dry mustard
1 teaspoon freshly ground black pepper
Fresh parsley, for garnish
Directions
Preheat the oven to 425 degrees F.

Place a baking rack on a sheet pan and arrange the sausages in one layer on the baking rack. Bake for 18 to 20 minutes, until the sausages are just cooked through.

Meanwhile, place the potatoes in a large saucepan with 1 tablespoon of salt and enough water to cover the potatoes. Bring to a boil and simmer for 20 to 25 minutes, until the potatoes are very tender. Drain the potatoes in a colander and return them to the saucepan. Add the butter, creme fraiche, milk, Dijon mustard, whole-grain mustard, dry mustard, 1 tablespoon salt, and the pepper and beat the potatoes in the pan with a handheld mixer on low speed until very smooth and creamy.

To serve, mound a generous portion of potatoes on a dinner plate and top with sausages that have been cut in half diagonally. Sprinkle with fresh chopped parsley and serve.

Irish stew

Ben made Irish stew and it was so good. I plan on making this again. The sauce had guinness beer and prunes. Also, the potatoes were mashed and on the side.

Chicken broccoli hot dish

I made one of my childhood favorites the other night at a friends house. It was really good and I plan on making it again very soon. Danielle was also hanging out with us so I made a separate veggie hot dish for her.

Ingredients
About 3 breast of chicken, diced
2- 2 1/2 cups of dry rice- cooked
About one bag of frozen broccoli
2 cans of cream soup (mushroom, chicken, celery)
Shredded cheeses

Directions

1. Bake chicken, cut into small pieces

2. Cook rice, my mom says 11min is the perfect time to cook rice on the stove (not min rice)

3. Mix everything together in a baking dish, leave a potion of cheese to sprinkle in top.

4. Bake until the broccoli is hot. About 30min.
